These engineered products now make up the majority of diets in many industrialized nations, driving a global crisis of malnutrition and obesity.
The primary driver behind the invention of these synthetic additives is industrial efficiency and cost reduction. Manufacturers replace expensive traditional ingredients like cream and butter with cheap, molecularly modified alternatives. These synthetic components allow food to be manufactured in massive central factories and transported across vast distances without spoiling or losing its texture.
The history of fat provides a clear example of how our diet was revolutionized for profit. The industry developed aggressive refining processes to strip cheap plant oils of their natural colors and smells, leaving a bland, interchangeable fat. This rise of ultra-processed food represents a shift from food as a biological necessity to a product designed strictly as a financial instrument.
